I have a confession to make. I am helplessly addicted to peanut butter. So when Reese’s peanut butter chips were on sale at the supermarket I took them home to whiz up some magic, which is how these cookies were born.

I was recently invited to participate in the Festival 21 bake sale by Fully Booked Women. Festival 21 is a two-day celebration championing food and inspiring positive change. So genius - soaking the sponge in pannacotta to keep it moist. When I returned to the cafe, I tried very hard to re-create their delicious lamington, & this is my interpretation.

I bought a jar of the most decadent dulce de leche from The Essential Ingredient recently. It reminded me of my favourite cookie sandwich from the cafe. Inspired by Fig + Salt, these cookie sandwiches are simply two deliciously golden ANZAC cookies glued together with vanilla buttercream and a thick coat of dulce de leche.
