I must have fruit on my pancakes, they feel naked without it. With nothing but one granny smith left in the fridge during social distancing, I threw together anything else I found in the fridge & it all came together to be this surprisingly tasty maple apple topping! It’s pretty sticky delicious, I think in the coming colder months they would be great to top off a fresh teacake in the afternoon as well!
Makes two serves
Ingredients
1x granny smith apple, peeled & cut into 1cm-ish pieces
½ tsp cinnamon
1 tsp sugar (any type will do)
15 g unsalted butter
maple syrup, to taste
Method
Heat a shallow pan to medium & throw in the apples, cinnamon, sugar & butter. Give it all a mix as it cooks, so that the apples get a good coating of everything. If you find the apples are drying up, you can add a little bit of water.
When the apples are soft, pour maple syrup into the pan (to your own taste - if you like a super runny sauce you may add more syrup or water). Stir together quickly & take off the heat. The maple apples are ready to top off your pancakes!
Maple apples can be kept in an airtight container for up to three days. Reheat to consume (microwave or over the stove is fine)!
