Honey, ginger + black sesame cake (for Nordic Ware)

 
 

A lovely Spring inspired cake made with honey, fresh ginger and black sesame, baked into little honeycomb-shaped pieces with Nordic Ware’s beautiful Pull-Apart Tin. The earthiness of the black sesame grounds compliment the honey and ginger flavours perfectly.

Alternatively if you want to bake a classic cake shape, an 8 inch / 20cm round tin is perfect.

INGREDIENTS:

For the cake:

  • 200g unsalted butter, softened

  • 110g soft brown sugar

  • 60g honey

  • 3 eggs, room temperature

  • 220g plain flour

  • 1½ tsp baking powder

  • ½ tsp bicarb soda

  • ½ tsp ground ginger

  • ¼ tsp salt

  • 100g sour cream

  • 1 tbsp finely grated fresh ginger

  • 20g finely ground black sesame seeds

To finish:

  • Toasted black sesame seeds

  • Extra honey

METHOD

Preheat the oven to 160°C (fan-forced). Thoroughly grease a Nordic Ware Honeycomb Pull-Apart Pan with softened butter, making sure to get into all the grooves and corners. Lightly dust with flour, tapping out any excess.

In the bowl of a stand mixer, beat the softened butter, brown sugar and honey for 3–4 minutes, until light and fluffy. Gently add the eggs one at a time, beating well after each addition. In a separate bowl, sift together the flour, baking powder, bicarb soda, ground ginger, salt and black sesame seeds.

Add the fresh ginger, before gradually adding the dry ingredients to the butter mixture in two additions, alternating with the sour cream. Mix until just combined, being careful not to overmix.

Spoon the batter evenly into the prepared honeycomb pan, gently tap the pan on the bench to settle the batter. Bake for 40-45 minutes, or until golden and a skewer inserted into the cake comes out clean.

Allow the cake to cool in the pan for 10 minutes before carefully turning it out onto a wire rack. Drizzle with extra honey and sprinkle with toasted black sesame seeds before serving warm.

Cake will keep in an airtight container in the fridge for up to five days, or frozen for up to one month. Prior to eating, reheat in the microwave to soften prior to eating.
