Last week I bought a bag of bananas on sale at my local grocery store, and promptly forgot about them when the whole house went down with a cold. To use them up before it’s too late, on a whim I made these pancakes for baby which he absolutely loved.
I used wholemeal spelt flour because that’s what I had at home, but you can use type of flour. If the batter is too thick for your liking, feel free to add a little bit of (any type) of milk. Delicious served alone, or you can spread some nut butter on top as well!
Makes approximately eight baby pancakes
Ingredients
100g wholemeal spelt flour, sifted
¼ tsp cinnamon
2 very ripe bananas, mashed
1 egg, lightly beaten
Method
In a mixing bowl, combine the wholemeal flour and cinnamon together & make a little well in the middle. Add the banana and egg, mix everything until just combined. Heat a pan on the stove at medium heat and lightly oil. Place spoonfuls of mixture on the pan as you like, and allow them to cook until the bottom is lightly browned or the mixture is becoming firm around the edges. Flip pancakes and cook the underside until lightly browned.
Cool before serving to baby - you may need to cut them into smaller pieces or slices, depending on where baby is on their solids journey.
Pancakes will keep for three days in an airtight container in the fridge, or freeze for up to three months.
