Apple oat slice

I like to make bakes without banana in it for Lincoln, because he usually eats a bit of the fruit itself daily. Too much banana can often cause constipation in little humans eating solids, therefore I keep an eye on his banana consumption. These apple oat slices are a great morning or afternoon snack, packed with apple and rolled oats, providing the little one with energy. To add another allergen, I think spreading a little bit of a nut butter on top would be delicious too!

Makes 18 slices

Ingredients

  • 2 medium sized apples, shredded

  • 180g rolled oats

  • 100g plain flour, sifted

  • 80g coconut oil, melted

  • 150ml milk

  • 2tsp baking powder, sifted

  • 1 tsp ground cinnamon

  • 1 tsp ground ginger

  • 1 egg, lightly beaten

Method

If you would like a slice with a fluffier texture, blitz the rolled oats in a food processor until they are in smaller pieces. Place the oats, shredded apple and milk in a bowl and mix together so that everything is coated in milk. You may set this aside for at least an hour to soften the oats.

Preheat oven to 165 degC (fan forced) and line a 20cm/8in square baking tin with parchment paper. Add the egg and melted coconut oil into the apple mixture and combine well. In a large mixing bowl, stir together the plain flour, baking powder, cinnamon and ginger. Add the apple mixture and mix until just combined.

Pour the batter into the baking tin and smooth flat with a spatula. Bake for 30-40 minutes, until the sides of the slice are starting to brown or a skewer inserted come out clean. Cool for 5-10 minutes in the tin before turning out to a cooling rack, this will avoid the slice cracking. Cool completely before cutting into 3x6cm slices.

Apple oat slices will keep in an airtight container in the fridge for up to 5 days, or in the freezer for up to three months. Reheat in the microwave for 10 seconds prior to serving baby.

Allergen modifications

  • To make egg free, substitute the egg for a chia egg (10g of chia seeds in 30ml of water)

  • To make this dairy free, replace cow’s milk with any milk alternative (soy, oat or nut milks)
